Breakfast Toast

Ingredients:

From vendors at the Waterfront Farmers Market

  • Fresh Baked Artisan Bread

  • Carrots

  • Garlic Scape

  • Fresh herb or spice of your choice for taste

  • Tomato​

  • Eggs

  • Olive Oil

Directions

  • Have fun shopping at the Waterfront Farmers Market for all the fresh ingredients!

  • Add 1tbsp of olive oil to pan or skillet on medium heat.

  • Dice the carrots first and add them to the pan (they take the longest to soften)​

  • Dice the garlic scape & tomato and add them to the carrots. Sauté to the softness you desire.
  • Crack two eggs into the pan and scramble the eggs along with garlic scape, tomato, and carrots
  • Slice your fresh artisan bread to desired thickness.
  • Toast bread or leave untoasted
  • About 1 minute before the eggs are done add the herb or spice you chose.

  • Pile your scrambled creation onto your fresh bread and enjoy your true farm-to-table breakfast!

Salsa Roasted Salmon

Ingredients:

From vendors at the Waterfront Farmers Market

  • 1 tub of chunky salsa

  • 2 salmon fillets (approx. 4oz each

  • 1tbsp flavored olive oil (divided)

Directions

  • Heat oven to 425°.

  • Place your Market salmon (flash-frozen or thawed) on a parchment paper-lined baking sheet.

  • Drizzle salmon with the flavored olive oil you have chosen.

  • Spoon your fresh market salsa on to each fillet.

  • Roast until salmon is cooked thoroughly (approx. 15 minutes)
